Salted meats (Local produce)Although the majority of butchers in the region produce salted meats, Habay has two craftsmen skilled in meat curing who produce sausages, liver pâtés, hams and meat pies. One butcher has given us the recipe for ham en croute as produced in Habay-la-Vieille: the raw ham is dried for six months and then desalted for 48 hours. Then a ball of dough big enough for four loaves of bread of 900 grs is made and the ham enclosed in the dough. Once cooked and cooled, the covering is removed on the rind side, the bones removed and the meat either presented in slices or whole.
