'Pâté Gaumais' (Local produce)Another speciality of the Habay region is 'Pâté Gaumais' (a baked pork pie), made in Gaume. The pie is made with a stodgy yeast dough pastry which has been slightly sugared. The filling is made of pork. The pork is cut by hand into separate chunks and the meat marinated in red wine or vinegar with garlic, shallots, onions, parsley, carrots, salt, pepper, sage, thyme, laurel, juniper berries and cloves. 'Pâté Gaumais' is round in shape and may or may not have scalloped edges. The minimum weight is 250 grs. The pie may be eaten warm or cold. It can be identified by a label or official rosette awarded by the certifying body.
